60% Sauvignon Blanc, 40% Semillon
A portion of the Sauvignon Blanc was left in tank to further mature and develop before bottling, resulting in a more mature wine in comparison to other wines.
Light straw with some hints of green, the slight development of this wine cannot hide the green grassy characters and adds to the depth and fullness of the nose. Hints of French oak with confectionary aromas are evident from the barrel maturation (5% of the Sauvignon Blanc, 3 months older French oak). The palate is fresh with good tropical and citrus fruits depth and weight. The Semillon gives this wine the ability to age and adds weight to the palate. Fresh natural acid retains the freshness of the wine. A lovely easy drinking wine that will match foods such as a Thai dishes, fish, chicken and quail.
2011 Sauvignon Blanc Semillon

66% Sauvignon Blanc, 34% Semillon Pale straw with tinges of green in colour, this wine has fresh cut grass of good intensity which is lifted by the addition of 34% Semillon. Sauvignon Blanc Semillon styles are fuller on the palate due to the addition of barrel fermented Semillon (5 weeks, older French oak) which adds weight to the mouth feel. Tropical fruits, citrus, fresh green apple flavours and a zesty natural acid finish leaving a clean palate. This wine is an ideal food accompaniment. Enjoy with, prawns, marron with lemon or garlic butter snapper.
